Raspberry-maple syrup dressing for spinach, strawberries and goat cheese

Ingredients for 4 servings:

  • 4 tbsp raspberry vinegar
  • 4 tbsp maple syrup
  • 2 tbsp olive oil
  • 2 tbsp sunflower oil
  • salt and pepper
  • 250 g young leaf spinach
  • 200 g strawberries
  • 1 small onion(s), red
  • 2 tbsp pine nuts
  • 2 packs of soft goat cheese in slices, approx. 2-3 per person

Working time approx. 15 minutes; Total time approx. 15 minutes

Perfect interplay of sour, fruity and tart

Combine the raspberry vinegar, maple syrup, olive oil, and sunflower oil and season with salt and pepper. A quick tip: Blend again with an immersion blender just before serving. Wash the spinach and strawberries. Finely slice the red onion. Lightly brown the seeds in a pan without oil. To serve, place the spinach in a bowl and top with the onion rings, seeds, strawberries, and goat cheese slices. Then toss everything well with the dressing. Serve with ciabatta.
