Raspberry Swirl Cookies
The perfect raspberry swirl cookies recipe with a picture and simple step-by-step instructions.
- 375 g Flour type 550
- 180 g Sugar
- 1 pinch Salt
- 0,5 tsp Baking powder
- 1 Pck. Vanilla sugar
- 1 Egg size M.
- 185 g Butter firm
- 200 g Raspberry jelly / jam
- Mix all dry ingredients in a bowl. Cut the butter into small pieces, add to the flour mix together with the egg and use the dough hook of the hand mixer to crumbly. Then quickly knead everything with your hands to form a smooth dough, divide it into 2 portions and roll each one out between 2 layers of baking paper to form a rectangle of 26 x 32 cm.
- Then loosen the top paper first, put it loosely on it again, turn the sheet of dough over with swing and remove the paper that was previously on the bottom and now on top. Spread half of the raspberry jelly or jam thinly on the dough sheet up to the edge and roll it up from one of the narrow sides – with the help of the baking paper. Then wrap the roll with the paper still underneath and put it in the refrigerator. Do the same with the 2nd portion of dough. The cooling time is approx. 1 hour.
- Preheat the oven to 200 ° convection. Remove the paper from the rolls, cut them (one after the other) into approximately 8 mm thick slices and place them spaced apart on the baking sheet lined with baking paper or foil. The baking time on the 2nd rack from the bottom is 10 – 12 minutes. During the 1st baking process, cut the 2nd roll into slices and place them on a base that is large enough for the baking sheet and lined with baking paper. Then just exchange this with the previous one and bake the 2nd portion. Put the finished cookies and paper on a grid and let them cool down completely. Only then loosen, because when they are warm they are very fragile.
- These cookies are – except for the cooling time – made very quickly and easily and with the raspberries they are simply a little “Schnuckedönschen” with addictive potential ………. ;-)))
