Ingredients for 4 servings:

  • 1 eggplant(s)
  • 2 bell peppers, yellow and red
  • 1 zucchini
  • 1 vegetable onion(s)
  • 6 pork schnitzels
  • 1 can/n tomatoes
  • 125 g feta cheese
  • salt and pepper
  • 1 tbsp oil

Wash and trim the eggplant, bell pepper, and zucchini, then cut into pieces. Peel and dice the onion. Heat oil in a large pan. Halve the schnitzels and fry briefly. Season with salt and pepper and place in a baking dish. Sauté the chopped vegetables with the onions in the pan. Add the tomatoes and their juices. Break them up a bit with a spatula. Season with salt and pepper to taste and then pour them over the schnitzels in the baking dish. Crumble the feta cheese on top, then bake the baking dish at 175 degrees Celsius (350 degrees Fahrenheit) for 15 minutes. Serve with rice.
