Ingredients for 4 servings:

  • 500 g minced meat
  • 3 carrots
  • 2 bell peppers
  • 5 tomatoes
  • 1 bunch of spring onions
  • 1 can of corn
  • 2 cups crème fraîche with herbs
  • 1 tube(s) Tomato paste
  • 2 tsp vegetable broth, instant (approx., amount as needed)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cut the spring onions, tomatoes, bell peppers, and carrots into small pieces. Brown the minced meat in a large pan, then add tomato paste (if desired) and fry it with the meat. Add the carrots and bell peppers to a second pan with oil and water, cover, and fry or simmer until the pieces are nicely cooked/soft. Add the tomatoes, spring onions, and sweetcorn to the pan with the minced meat and let it fry for a while. Once the bell peppers and carrots are cooked through, add them to the minced meat and mix in. Finally, season with vegetable stock and stir in the crème fraîche. Serve with rice.
