Ravioli with goat's cheese filling and fruity accompaniment

Ingredients for 2 servings:

  • 200 g flour
  • 2 eggs
  • 1 tbsp olive oil
  • 4 apricots, dried and pitted
  • 1 fig(s), dried
  • 150 g goat’s cheese
  • 2 tbsp milk
  • 3 sprigs of fresh thyme
  • e.g. salt and pepper
  • 2 tbsp butter for frying
  • e.g. Parmesan
  • Flour for the work surface

Instructions

Working time approx. 25 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

with dried apricots and figs

Mix flour, eggs, olive oil, and a pinch of salt into a smooth dough. Store in an airtight container and let rest for at least 15 minutes. Mix the goat’s cheese with the milk and stir until smooth, then season with salt and pepper to taste. Cut the dried apricots and figs into small cubes. Generously flour the work surface and the dough. Roll out the dough very thinly, place it in a ravioli dish, fill it with the goat’s cheese, and press the dish down firmly. Heat salted water in a saucepan and cook the ravioli for about 8 minutes, depending on their size, in hot, but not boiling, water. Heat the butter over moderate heat and lightly brown the ravioli, apricots, figs, and thyme. If you like, you can add coarsely chopped Parmesan cheese towards the end.
