Raw Kohlrabi
The perfect raw kohlrabi recipe with a picture and simple step-by-step instructions.
- 2 delicate Kohlrabi fresh
- 1 Apple Breaburn
- 2 tablespoon Lemon juice
- 10 Fresh radishes
- 100 ml Cream
- 2 Pinches Salt
- 2 Pinches White milled pepper
- 2 Pinches Sugar
- 1 kl. bunch Chives fresh
- 5 sheet Lemon balm
- Peel the kohlrabi and apple, grate the apple directly into a bowl on the coarse side of the grater and mix immediately with the lemon juice, then grate the kohlrabi and stir in the cream, pepper, salt and sugar.
- Cut the radishes into small slices, cut the chives into fine rolls and the lemon balm (except for a few individual leaves for garnish) very finely. Put everything in the bowl and mix thoroughly again; Let it steep in the refrigerator.
- Serve garnished with the lemon balm leaves. We love this raw food for lunch and dinner at the same time because it is hearty and refreshing.
- 4th tip: if the kohlrabi have very fresh leaves, the most tender of them can also be finely chopped and mixed with the raw vegetables – they taste very good, but should be really crisp and fresh!
