Raw strawberry pudding

Ingredients for 4 servings:

  • 300 g strawberries
  • 200 ml water
  • 2 tsp, heaped psyllium husks, ground
  • 1 tbsp seeds (chia)
  • 2 tbsp agave syrup, approx.

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

with chia seeds and ground psyllium husks

Puree the strawberries and water using an immersion blender. Add agave syrup to the mixture if desired (this is unnecessary with ripe strawberries, unless you have a serious sweet tooth). Then stir in the ground psyllium husks and chia seeds with a spoon. Immediately transfer the mixture to serving bowls and let stand for about 10 minutes. After 10 minutes, the mixture will have a pudding consistency.
