Ingredients for 1 servings:

  • 120 g butter, melted, cooled
  • 125 g sugar
  • 6 eggs
  • 125 g flour
  • some lemon(s), zest
  • Powdered sugar or chocolate coating

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sponge cake dough – pastry, makes about 70 Madeleines

Beat the eggs and sugar until light and thick (takes about 5 minutes on the highest setting). Carefully add the melted, cold butter and lemon zest while beating. Sift the flour over the egg mixture and fold in. Grease and flour a madeleine mold. Spoon 2 teaspoons into each mold (they will then be about 2/3 full) and bake in a preheated oven at 180°C until light brown. Turn out of the mold and let cool. Dust with powdered sugar or dip halfway into melted chocolate.
