Recipe for seitan à la chicken

Ingredients for 2 servings:

  • 250 g seitan flour (Seitanfix)
  • 4 tbsp nutritional yeast
  • 3 tbsp chickpea flour
  • 1 tbsp vegetable stock powder
  • 1 ½ tsp chicken seasoning
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp sweet paprika powder
  • ½ tsp cumin powder
  • ½ tsp onion powder
  • 300 ml water
  • 2 tbsp vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Vegan meat substitute with seitan fix

Mix the dry ingredients thoroughly in a bowl. Mix the wet ingredients and add them to the dry ingredients. Stir with the handle of a wooden spoon until combined, then knead the dough thoroughly by hand for 2-3 minutes. Cut in half, flatten, and wrap in aluminum foil. Don’t wrap the foil too tightly, as the seitan will expand during cooking. Steam in the steamer for 50 minutes, turning the parcels halfway through. The seitan can be eaten as a cold cut or shredded and fried.
