Ingredients for 4 servings:

  • 1 small head of red cabbage, sliced
  • 2 tbsp lard, vegetarian also possible
  • 2 medium-sized onions, cut into strips
  • 2 large apples, sour, sliced
  • 50 g plum(s), dried, finely chopped
  • 50 g apricot(s), dried, chopped
  • 50 g date(s), dried, chopped
  • 150 ml apple juice
  • 2 tbsp balsamic vinegar, dark, good quality
  • 2 tbsp spice(s) (peppercorns, clove(s), bay leaf, juniper berries)
  • Jam (blackcurrant jelly)
  • Salt

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the lard and sauté the onions in it. Add the red cabbage and fry lightly, then add the apples and continue frying. Add the dried fruit and spices, deglaze with apple juice and balsamic vinegar, and let the cabbage simmer on low heat for about 1 hour. Season with blackcurrant jelly and salt. I’ve also used cranberry jelly and varied it with the dried fruit.
