Ingredients for 6 servings:

  • 2 tbsp goose fat
  • 250 g bacon, diced
  • 3 apples, Boskoop
  • 2,250 g red cabbage, (red cabbage) frozen
  • 2 tbsp balsamic vinegar
  • 2 tbsp sugar
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 1 hour 55 minutes

soft and delicious in taste

Thaw the red cabbage. Peel the apples and dice them. Heat the goose fat in a large pot. Sauté the diced bacon and the Boskopa apple pieces over medium heat for about 10 minutes. Then add the red cabbage. Fill the pot halfway with water. Add the balsamic vinegar, sugar, salt, and pepper, and simmer for about an hour and a half, stirring frequently. Just until the water has evaporated. The result is a relatively soft red cabbage with a unique flavor.
