Red cabbage “Häschber-style”

Ingredients for 4 servings:

  • 1 head of red cabbage
  • 1 apple
  • 1 shot of vinegar
  • some juniper berries
  • 1 tsp gingerbread spice
  • n. B. sugar
  • 1 pinch of salt
  • 2 bay leaves
  • n. B. water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Red cabbage, blue cabbage

Cut the red cabbage into thicker or thinner strips, depending on your taste. Core and dice the apple. Place both in a large pot and add plenty of water. Add the bay leaves, juniper berries, and sugar. Stir everything thoroughly and bring to a boil. Then reduce the heat to low and simmer over medium heat until the red cabbage is firm to the bite. Now add the gingerbread spice and stir well. Caution: too much gingerbread spice will make the dish too bitter! Finally, season with vinegar and salt and season again to taste, as the amount of spice depends on the size of the cabbage. Bring everything back to a boil.
