Red cabbage with pears

Ingredients for 4 servings:

  • 1 kg red cabbage, finely chopped (or equivalent amount from the jar)
  • 1 onion(s), finely chopped, does not have to be extremely fine
  • 100 g bacon, streaky, diced
  • some lard or oil (lard is more savory)
  • 3 pears, firm but aromatic, chopped
  • 1 jar red wine
  • salt and pepper
  • 1 bay leaf
  • 100 g raisins
  • 100 g currants
  • 1 tsp. clove powder
  • some jelly (blackcurrant or blackberry jelly)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

We call it “Delicious Cabbage”, wonderful with goose and game

Sauté the onion and bacon in lard/oil, then add all the other ingredients and simmer gently for about 1 hour. This is a dish that needs to be seasoned; precise quantities are pointless, as it all depends on the individual taste of the ingredients, which vary. You can leave out certain things or substitute them with others—but then it’s no longer this delicious cabbage, but rather some other dish.
