Red lentil salad

Ingredients for 1 servings:

  • 90 g lentils, red
  • 300 ml vegetable stock
  • 1 bunch of radishes
  • 1 red bell pepper(s)
  • 1 cm ginger
  • Pepper, black from the mill
  • 2 pinches of salt
  • 1 bunch of chives
  • 1 orange(s)
  • 1 tsp olive oil
  • possibly anise

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Ayurvedic

Cover the red lentils and simmer in the vegetable broth for 10-12 minutes, drain, and let cool. Wash, trim, and finely chop the bell peppers and radishes. Peel and finely grate the ginger. Add the ingredients to the lentils and stir in. Finely chop the chives and add to the salad. Squeeze the orange and drizzle the juice with the oil over the salad. Season with salt and pepper. If you like, you can also add anise. This salad is easy to prepare in advance.
