Red lentil soup

Ingredients for 3 servings:

  • 200 g lentils, red
  • 2 tomatoes
  • some ginger
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tbsp butter
  • 1 tsp, heaped spice mix (Garam Masala) or
  • curry powder
  • 1 liter vegetable broth
  • 1 tbsp lemon juice
  • 1 bunch of coriander leaves
  • Salt
  • possibly crème fraîche or cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dal

Rinse the lentils thoroughly in a sieve with cold water and drain. Wash and roughly dice the tomatoes. Peel and dice the ginger, onion, and garlic, and sauté in the butter for about 4 minutes. Add the tomatoes, lentils, and garam masala and sauté everything for about 3 minutes. Pour in the stock and season with salt. Cover and simmer for about 10 minutes. Serve with chopped coriander. If desired, add a little crème fraîche or cream.
