Red Lentil Stew with Belly Meat and Cabanossi

Ingredients
 

  • 800 g Pig belly (fe) fresh
  • 1 tablespoon Dried lovage
  • 1 Onion
  • 2 Bay leaves
  • 3 Juniper berries and allspice grains
  • 3 Salt and pepper
  • 2 bunch Soup greens fresh
  • 600 g Diced potatoes
  • 200 g Lentils red
  • Cabanossi

Instructions
 

  • First, pour hot broth over the lentils and let them boil for 5 minutes, then remove from the stove and allow to swell.
  • Wash the meat and season in about 1 liter of water with the onion, bay leaf and lovage and salt and pepper, and cook for 1 hour until soft. During this time, peel and dice the potatoes and prepare the soup vegetables ready for kitchen.
  • When the meat is tender, lift it out of the broth, pour the broth through a sieve and collect the sifted broth. So now the spices and possibly boiled bones from the meat are not in the soup in the broth, we now add our vegetables and potato pieces and the drained linden trees and let everything cook for another 15 minutes
  • During this time, separate half of the meat from the fat and cut the meat into cubes. Cut the cabanosis into bite-sized pieces and add to the soup. Bring everything to the boil again, possibly with a little pepper. Now arrange everything delicious .......
  • I made onion meat from the rest of the meat .... but this is a new recipe and there will be tomorrow .....
