Ingredients for 1 servings:
- 2 large onions, red
- 1 cup apple juice or red wine
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp sugar, brown
- 1 tsp, heaped paprika powder, sweet
- some parsley
- oil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
as a side dish to grilled meat or as a spread
Dice the onions and fry in oil. Add the remaining ingredients, including the paprika, and simmer for 30 minutes. Puree, stir in some chopped parsley, and serve. The onion purée tastes great with grilled meat. It’s also delicious as a cold spread, or spread warm on baguette or farmhouse bread and served as an appetizer with a dollop of crème fraîche. I always arrange small, spread-on-bread strips in the shape of a star on a plate and place a spoonful of crème fraîche, garnished with parsley, in the center of the plate. You can also use the onion purée as a filling for a quiche.
