Cookies with a subtle red wine and cinnamon flavor

Mix the flour, sugar, egg, cocoa, cinnamon, butter, and red wine and knead into a dough. Let the dough rest in the refrigerator for one hour. Remove the dough from the refrigerator and preheat the oven to 180°C fan/convection oven. Roll out the dough thinly and cut out cookies. Bake the cookies for about 10 minutes. The plain red wine cookies (5-6 baking sheets) are now ready. For double cookies (optional): Let the cookies cool thoroughly. Spread jam on the flat side of each cookie and stick it together with a second cookie. Spread one side of the cookie with melted chocolate glaze or dip it in it. Immediately afterwards, sprinkle with ground nuts or roll in it.
