Cranberry or raisin cookies

Ingredients for 2 servings:

  • 100 g cranberries or raisins
  • 4 tbsp rum
  • 125 g butter
  • 125 g sugar
  • 1 dashes lemon juice
  • 2 eggs
  • 200 g flour
  • 50 g almonds, ground
  • ½ tsp baking powder

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Simple and delicious recipe for fruity cookies

Let the cranberries or raisins soak in the rum for 10 to 15 minutes. Cream the butter until fluffy. Add the sugar, lemon juice, and eggs and beat until fluffy. Mix the flour and baking powder into the cream. Then add the almonds and the soaked cranberries or raisins. Preheat the oven to 180°C (fan). Use two teaspoons to place small heaps (about the size of a walnut) onto a prepared baking sheet, leaving enough space between them so the cookies don’t stick together and can rise properly. Bake the cookies on the middle rack of the oven for 10 minutes, until golden brown.
