Redcurrant panna cotta

Ingredients for 3 servings:

  • 250 g currants, black or red (currants, fresh or thawed)
  • 100 ml syrup (red or black currant syrup)
  • 3 sheets of gelatin
  • 200 g whipped cream
  • 40 g sugar
  • 1 packet of vanilla sugar

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Finely purée the berries with the syrup and then pass through a sieve. Soften the gelatin. Bring the cream to a boil with the vanilla sugar and sugar and simmer for 2-3 minutes. Caution: the cream will boil over quickly, so stay with it and bring to a simmer on low heat instead! Let the cream cool briefly, then dissolve the squeezed-out gelatin in the cream. Now stir the currant purée into the cream, divide the mixture between 3 bowls or glasses, and chill for a good 4 hours. Then garnish with a few fresh berries and a sprig of lemon mint and serve!
