Refined Tomato Sauce Not Only for Chicken Burgers

- 3 Tomatoes
- 150 g Cocktail tomatoes
- 1 tbsp Tomato paste
- 1 Red onion
- 1 Clove of garlic
- 1 Chilli pepper – red
- 1,5 tbsp Butter
- 1 tsp Mustard medium hot
- 1 tsp Sambal Oelek
- 2 tbsp Orange juice, freshly squeezed
- 0,5 tsp Brown sugar
- 150 ml Meatsoup
- Sea salt & pepper from the mill
- Blanch the tomatoes, peel them, remove the stalk and dice them. Peel onion and garlic and chop finely. Cut out the stem end of the chilli pepper and cut in half lengthways. Partially spread out the kernels and cut very finely.
- Heat butter in a pan. Add onion, garlic and chilli and sauté. Mix the meat stock with tomato paste and deglaze the pan with it. Then bring everything to a boil.
- Put the contents of the pan in a saucepan. Add the remaining ingredients and simmer slowly over a mild heat, covered, until soft. Finally, pour in the orange juice, stir well, season again if necessary, season again if necessary and puree finely.
- Bring the tomato sauce to a boil. Have clean twist-off glasses ready. Pour the hot tomato sauce into hot glasses, close the lid tightly, turn it upside down and let it cool down slowly. Keep in the refrigerator for a few days.
