Refreshing salad for Indian curries

Ingredients for 4 servings:

  • 1 onion(s)
  • 3 tomatoes
  • 1 cucumber(s)
  • 1 small can of corn
  • 4 tbsp lime juice
  • 1 tsp spice mix (garam masala)
  • 1 tbsp spice mix (Chat Masala)*
  • 1 tsp salt and pepper, black
  • Oil (salad oil)
  • 1 stalk coriander leaves, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the dressing ingredients together well. Once the spices are well blended in the lime juice and the salt has dissolved, add a little salad oil. Slice the onion into rings. Dice the tomatoes and cucumber. Drain the corn and mix everything together. Stir in the coriander. Cover the salad and let it rest in the refrigerator for 1 hour. Stir gently a few times during the cooking time. *Chat Masala – a small stock mix of 1 tsp mango powder, 1 tsp cumin powder, 1/2 tsp ground black pepper, and 1/2 tsp salt.
