Reindeer muffins

Ingredients for 1 servings:

  • 50 g margarine
  • 125 g brown sugar
  • 2 eggs
  • 100 g flour
  • 1 ½ tsp baking soda
  • 3 tbsp cocoa powder
  • 125 g sour cream
  • 125 g dark chocolate
  • 2 tbsp sugar
  • 150 g sour cream
  • 16 biscuits (Amarettini)
  • 16 sweets (M&Ms), red or brown
  • 32 icing – decorative eyes
  • 32 small pretzels (salted pretzels or chocolate-covered)
  • e.g. powdered sugar
  • some water

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

Chocolate muffins with cream icing and reindeer face, makes 16 pieces.

Preheat the oven to 180°C (top/bottom heat). Prepare two baking trays, each with 8 muffin cups (I used silicone cups). In a bowl, combine the margarine, sugar, eggs, flour, baking soda, and cocoa powder. Mix together to form a smooth batter. Stir in 125g of sour cream with a spoon. Pour the batter into the cups. Bake each tray for 20 minutes, until the muffins have risen and are firm to the touch. Remove from the oven and let cool. Meanwhile, for the glaze, melt the chocolate in a double boiler. Let cool briefly, then stir in the sugar and 150g of sour cream. Spread the glaze onto the muffins. Poke small holes into the amaretti biscuits and place an M&M on top, face down. For better adhesion, mix some powdered sugar with a few drops of water to make glaze and coat the M&Ms with it before placing them on the baking tray. Place the pretzels on top left and right as antlers, and add the eyes last. Refrigerate. After two days in the fridge, this recipe tasted absolutely delicious. I distributed the muffins to my colleagues at work for St. Nicholas Day, and everyone devoured them in no time.
