Rhineland carrot vegetables

Ingredients for 6 servings:

  • 1 kg carrot(s)
  • 1 kg potatoes
  • 200 g bacon
  • 1 large onion(s)
  • Pinch(s) of sugar
  • Prise(to tasteühe
  • a little butter
  • some Mettenden or Bratwurst
  • possibly applesauce

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Chop the carrots and potatoes and place them in a pot. Add a little granulated stock and sugar, just cover with water, and cook the vegetables until soft. Meanwhile, fry the bacon cubes and onion in a little butter. When the potatoes and carrots are tender, pour the stock into a bowl. Add the bacon and onions to the potatoes and carrots and mash together. Add the stock until the mash reaches the desired consistency. Season to taste with granulated stock and/or sugar; it depends on whether you prefer it sweeter or saltier. Now fry the Mettenden sausage or bratwurst and enjoy. The kids and I love eating it with applesauce.
