Rhubarb – Strawberry Jam

Ingredients for 3 servings:

  • 800 g rhubarb
  • 250 g strawberries
  • 1 piece(s) ginger, fresh, walnut-sized
  • 1 bunch mint, fresh
  • 1 kg gelling sugar
  • 1 pack of citric acid

Instructions

Working time approx. 6 hours 30 minutes; Rest time approx. 6 hours; Total time approx. 12 hours 30 minutes

makes 3 jars of 500 g each

Trim the rhubarb and cut into small pieces. Wash, trim, and quarter the strawberries. Peel and finely grate the ginger. Wash the mint, shake it dry, and finely slice its leaves. Combine everything with the sugar in a large pot. Cover and let it steep for four to six hours, stirring occasionally. Then stir in the citric acid and bring to a boil. Boil briskly for four minutes while stirring. Immediately pour into jars.
