Rhubarb Crumble

Trim the rhubarb and cut into equal-sized pieces (approx. 1 cm). Bring to a boil in a saucepan with 120 g of sugar and simmer for 5-6 minutes. Then transfer to a buttered casserole dish and let cool slightly. Mix the flour with the remaining sugar, vanilla sugar, salt, and cinnamon. Sprinkle with the butter to form a crumble. Sprinkle the crumble over the rhubarb and bake in a preheated oven at 200°C for 20 minutes. Serve with a scoop of vanilla ice cream or on its own—simple and delicious.
