Rice and spinach casserole

Ingredients for 4 servings:

  • 200 g mushrooms
  • 200 g rice
  • 300 g spinach
  • ½ bunch of spring onions
  • 4 tbsp vegetable oil
  • salt and pepper
  • Paprika powder
  • 500 ml broth

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Preheat the oven to 180°C. Finely chop the spring onions and fry briefly in hot oil. Slice the mushrooms and add them. Sauté well until golden brown. Add the rice and sauté for 1-2 minutes, stirring occasionally, until translucent. Add the spinach to the rice, add the broth, mix everything together, and season with salt, pepper, and paprika. Grease a casserole dish, add everything, and cover. Place in the preheated oven and bake for 1 hour. After baking, let cool for about 15-20 minutes before serving.
