Rice – cheese – fritters

Ingredients for 2 servings:

  • 200 g brown rice or long grain rice
  • Water (salt water)
  • 1 bunch of spring onions
  • 3 eggs
  • 40 g flour
  • 150 g cheese (e.g. Emmental), grated
  • Salt and pepper from the mill
  • Paprika powder, hot
  • Clarified butter, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice in salted water according to the package instructions. Let cool slightly. Trim and wash the spring onions, then slice them into very fine rings. Mix the onions, eggs, flour, and cheese with the rice and season with spices. Heat clarified butter in a non-stick pan. Fry about 1-2 tablespoons of the mixture per pancake in the fat until crispy brown on both sides.
