Rice on Vegetables – Pineapple – Goulash

The perfect rice on vegetables – pineapple – goulash recipe with a picture and simple step-by-step instructions.

  • 1 tbsp Mild coconut fat
  • 1 piece Diced onion
  • 0,5 piece Freshly diced pineapple
  • 0,5 piece Freshly diced zucchini
  • 2 tbsp Tomato paste concentrated three times
  • 2 Cup Vegetable broth
  • ***************
  • 2 cups Brown rice
  • 4 cups Vegetable broth
  1. Sauté the diced onion in the coconut oil.
  1. Add the pineapple cubes and let them stew a little so that the sugar contained can caramelize a little and intensify the taste.
  1. Now add the zucchini cubes, briefly toss this too and enrich with the tomato paste, stir well with the vegetable stock and bring to a simmer.
  1. If necessary, add a little salt and fresh pepper and round off the whole thing.
