Rice on Vegetables – Pineapple – Goulash
The perfect rice on vegetables – pineapple – goulash recipe with a picture and simple step-by-step instructions.
- 1 tbsp Mild coconut fat
- 1 piece Diced onion
- 0,5 piece Freshly diced pineapple
- 0,5 piece Freshly diced zucchini
- 2 tbsp Tomato paste concentrated three times
- 2 Cup Vegetable broth
- ***************
- 2 cups Brown rice
- 4 cups Vegetable broth
- Sauté the diced onion in the coconut oil.
- Add the pineapple cubes and let them stew a little so that the sugar contained can caramelize a little and intensify the taste.
- Now add the zucchini cubes, briefly toss this too and enrich with the tomato paste, stir well with the vegetable stock and bring to a simmer.
- If necessary, add a little salt and fresh pepper and round off the whole thing.
- Cook the rice in the vegetable stock and serve with the vegetable stew.
