Ingredients for 2 servings:
- 120 g rice, red
- salt water
- 1 cardamom pod(s), if desired
- 1 stalk(s) leek
- 400 g pumpkin(s)
- 100 g diced ham
- salt and pepper
- Harissa
- some sour cream
- possibly cheese cubes

quick and easy dish
Cook the rice in salted water according to the package instructions. I recommend using red rice for this dish because its nutty flavor pairs wonderfully with the pumpkin. I also like to add a whole cardamom pod to the rice. While the rice is cooking, slice the leek and fry it in a pan with a little oil. Cut the pumpkin into bite-sized pieces and add it to the pan along with the ham cubes. Cook over medium heat, stirring frequently, for about 10 minutes. Add the cooked rice to the pan and mix with the vegetables. Sauté everything for a few more minutes and season with salt, pepper, and harissa. If you like, you can add a dollop of sour cream at the end. It also tastes great if you mix in some cheese cubes, such as Gouda, just before serving.
