Rice salad with peppers and mandarin oranges

Ingredients for 8 servings:

  • 250 g rice, cooked, cooled
  • 250 g mayonnaise
  • 2 onions
  • 250 g meat sausage
  • 2 cans of tangerine(s)
  • 3 bell peppers, color according to taste
  • 2 tbsp soy sauce
  • 1 pinch(s) of sugar
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and finely dice the onions. Drain the mandarin oranges and finely dice the sausage (approx. 1/2 cm in size). Quarter, trim, wash, and dice the bell peppers. Mix the rice with the remaining ingredients (except the mandarin oranges). Add the mayonnaise and season with salt, pepper, and sugar. Add the mandarin oranges just before serving. If you like, you can also add the soy sauce (but use less salt). I often omit it, as it makes the salad look brown.
