Rice Salad with Spicy Marinated Chicken Breast

The perfect rice salad with spicy marinated chicken breast recipe with a picture and simple step-by-step instructions.

chicken breast

  • 2 Chicken breasts
  • 8 tbsp Soy sauce
  • 1 tbsp Strength
  • 2 Cloves of conical garlic, finely grated
  • 1 Chili peppers, finely chopped
  • Black pepper from the mill
  • Salt
  • Oil

salad

  • 100 g Red rice
  • 6 Radishes, finely sliced
  • 1 bunch Spring onions, cut into thin rings
  • 0,25 Cucumber, quartered and sliced
  • 2 Red Pointed paparika, cut into fine strips
  • 200 g Mushrooms, sliced
  • 1 bunch Coriander, chopped
  • Oil
  • 1 tbsp Wild Garlic butter
  • Black pepper from the mill
  • Salt

dressing

  • 1 tsp Dijon mustard
  • 1 tbsp Honey
  • 1 Lime, juice and zest
  • 1 Garlic clove, finely grated
  • Black pepper from the mill
  • Salt
  • 50 ml Olive oil

chicken breast

  1. Cut the chicken breast into slices approx. 0.5 cm thick and place in a bowl. Put the soy sauce, the chilli, the garlic, salt, pepper and the starch in a bowl, stir well and then pour over the chicken breast and mix well, then cover and leave to marinate in the refrigerator for about 2 hours.

  1. Bring the rice to the boil with twice the amount of water and a little salt and then simmer on the lowest heat for about 40 minutes, then strain over a sieve, rinse with cold water and drain well and then put in a salad bowl.
  2. Now add the spring onions, cucumber, radishes and peppers. Heat some oil in a pan (really hot) and fry the champis in it, they should already have roasted aromas, so make sure that the oil is really nice and hot. Season a little with salt and pepper and about 1 minute before the end of the cooking time add the garlic butter and toss the champis in it. Take the champis out of the pan and add to the salad.

  1. Put the mustard, garlic, lime juice and zest, as well as salt and pepper in a bowl and stir, then add the oil in a thin stream and stir in, so that a creamy dressing is formed.

  1. Heat a little oil in a pan and fry the chicken breast slices until crispy. Then pour the dressing over the salad, mix well and then add and mix in the chopped coriander. Arrange the salad and add the chicken breast.
