Ingredients for 4 servings:
- 250 g rice
- 2 bunch spring onions
- 400 g mushrooms, small
- 3 tbsp oil
- 6 eggs
- Salt (alternatively 3 tbsp light soy sauce)
- pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cook rice according to package instructions. Trim spring onions and slice into thin, diagonal rings. Trim and halve mushrooms. Heat oil and sauté spring onions. Add mushrooms and fry. Add rice and fry for about 3 minutes, stirring constantly. Beat eggs and season with salt or soy sauce and pepper. Fry one fluffy scrambled egg in a separate pan and then stir into the rice. Serve immediately.
