Ingredients for 2 servings:
- 250 g rice
- 100 g peanuts, roasted
- 100 ml coconut milk
- 200 ml cream
- e.g. salt and pepper
- n. B. Vegetable broth, granulated

Cook the rice according to the package instructions for about 12-15 minutes. After about 10 minutes, when the water is still a bit too tender, add the peanuts and stir well. When the rice has the desired firmness and all the water has evaporated, add the coconut milk and cream, stir well, and season. I always prefer a teaspoon of vegetable stock powder, but this is a matter of taste. Be careful with the salt, as the roasted peanuts are usually already salted. Simmer gently for another 2-3 minutes until the desired consistency is reached. The rice makes a delicious main course with a mixed salad, or it goes well as a side dish with fish, for example.
