Ingredients for 4 servings:

  • 3 large onions
  • 1 garlic clove(s)
  • 50 g butter
  • 1 red bell pepper(s)
  • 200 g tomatoes
  • 500 g zucchini, small
  • 1 jar wine, dry Riesling
  • 150 g crème fraîche
  • Salt
  • pepper
  • Paprika powder, sweet
  • 1 bunch of parsley
  • 1 bunch of chervil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Blanch the tomatoes in hot water, let them steep briefly, and then peel them. Slice the tomatoes and zucchini. Finely slice the bell peppers. Peel the onions and garlic cloves, slice them thinly, and sauté them in the butter. Add the finely chopped bell peppers and sauté briefly, then add the prepared tomatoes and zucchini. Add the Riesling and simmer uncovered for 10-15 minutes. Thicken with crème fraîche and season with spices to taste. Wash, chop, and add the herbs.
