Ingredients for 4 servings:
- 500g penne (rigatoni)
- 250 g minced beef
- 250 ml meat broth or vegetable broth
- 1 small onion(s) , (shallot)
- 1 ½ cloves garlic
- 4 tomatoes, (Roma or Beefsteak tomato(s))
- 4 tbsp olive oil
- Salt
- Cayenne pepper
- oregano
- Thyme
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the minced meat in olive oil. Peel, quarter, and core the tomatoes. Dice the tomato fillets. Peel and dice the onion and garlic, then add them to the minced meat and continue to cook briefly. Add the vegetable or meat broth, season with pepper, a little salt, oregano, and thyme, and simmer for 20 minutes. Meanwhile, cook the rigatoni until al dente. Place the penne in a large bowl and pour the sauce over it. Serve with freshly grated Parmesan cheese.
