Ingredients for 1 servings:

  • 300 g flour (whole wheat flour)
  • 100 g spelt flour (wholemeal spelt flour)
  • 70 g sesame seeds
  • 1 tsp salt
  • 1 packet of dry yeast
  • 2 tsp honey
  • ¼ liter milk, lukewarm

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Roast half of the sesame seeds in a pan without fat until they smell pleasant. In a bowl, combine both types of flour with the roasted sesame seeds and salt. Mix in 1 packet of dried yeast and make a yeast dough with honey and milk. Let it rise in the oven at 50°C for 30 minutes. Preheat the oven to 200°C. Then knead the dough thoroughly again, divide it into 12 equal pieces, and shape them into balls. Roll the balls into 25 cm long strands on the remaining sesame seeds, then seal them into rings. Place the rings on a baking sheet lined with baking paper, flatten slightly, and cover and let rise for another 20 minutes. They should increase in volume by a third. Bake the rings on the middle rack for 15-20 minutes until golden brown.
