Ingredients for 4 servings:

  • 300 g spelt flour
  • 400 ml milk
  • 8 eggs, separated
  • 60 g sugar or 8 g sweetener
  • 1 pinch of lemon peel
  • 1 vanilla pod(s), including the pulp
  • Raspberries, blueberries and/or strawberries as garnish
  • Raspberry jam or strawberry jam
  • Powdered sugar or sweetener for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

with spelt flour

First, beat the egg whites with the salt until stiff peaks form. Then, combine the flour, milk, egg yolks, vanilla bean paste, lemon zest, and sugar or sweetener until a smooth batter forms. Fold the egg whites into the batter. Heat a little oil in a large pan, pour in the batter, and cook over medium heat until golden brown. Turn over and cook for another 3-4 minutes. Tear the Schmarrn into pieces and bake for a little longer. Transfer to a plate and garnish with powdered sugar, jam, and the fruit.
