Roast Beef in Honey-balsamic Marinade

The perfect roast beef in honey-balsamic marinade recipe with a picture and simple step-by-step instructions.

For the marinade:

  • 2,5 tbsp Honey
  • 2 tbsp Balsamic vinegar
  • 1 Pc. Clove of garlic
  • 1 tsp Ground ginger
  • 1 tbsp Tabasco green
  • 0,5 tsp Salt
  • 0,5 tsp Ground pepper

For the side dish:

  • 10 Pc. Potatoes
  • 5 tbsp Freshly grated Parmesan
  • 2 Pc. Eggs
  • 5 tbsp Herbs of Provence
  • 250 g Pea pod
  • 1 tbsp Butter
  • 1 pinch Salt
  1. It is best to marinate the meat 2 days in advance.
  2. Mix all the ingredients for the marinade and rub the meat with it. Then put the rest of the meat in a freezer bag, add the meat and put it in the fridge.
  3. On the day of preparation, remove the meat from the marinade and sear it on all sides. Then cook on a tray at approx. 135 degrees for at least 45 minutes. It should still look bloody when it’s done.
  4. Boil the potatoes for 20 minutes. Then hollow them out so that they look like little boats. Let cool down.
  5. Mix a quarter of the hollowed-out potato mixture with the other ingredients and bake at approx. 200 degrees for 10 minutes.
  6. Sweat the washed pea pods very briefly in butter and then serve.
