The perfect roast beef in honey-balsamic marinade recipe with a picture and simple step-by-step instructions.
For the marinade:
- 2,5 tbsp Honey
- 2 tbsp Balsamic vinegar
- 1 Pc. Clove of garlic
- 1 tsp Ground ginger
- 1 tbsp Tabasco green
- 0,5 tsp Salt
- 0,5 tsp Ground pepper
For the side dish:
- 10 Pc. Potatoes
- 5 tbsp Freshly grated Parmesan
- 2 Pc. Eggs
- 5 tbsp Herbs of Provence
- 250 g Pea pod
- 1 tbsp Butter
- 1 pinch Salt
- It is best to marinate the meat 2 days in advance.
- Mix all the ingredients for the marinade and rub the meat with it. Then put the rest of the meat in a freezer bag, add the meat and put it in the fridge.
- On the day of preparation, remove the meat from the marinade and sear it on all sides. Then cook on a tray at approx. 135 degrees for at least 45 minutes. It should still look bloody when it’s done.
- Boil the potatoes for 20 minutes. Then hollow them out so that they look like little boats. Let cool down.
- Mix a quarter of the hollowed-out potato mixture with the other ingredients and bake at approx. 200 degrees for 10 minutes.
- Sweat the washed pea pods very briefly in butter and then serve.
