Roast beef with apple curry sauce

Ingredients for 2 servings:

  • 2 small apples
  • 100 g low-fat curd cheese
  • 2 tbsp chives, finely chopped
  • mineral water
  • curry powder
  • pepper
  • Salt
  • 150 g carrot(s)
  • ½ bunch basil
  • lemon juice
  • 40 g roast beef, roasted
  • 2 slice(s) bread(s) , (linseed bread)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, peel, quarter, core, and dice the apples. Mix together the quark, apple pieces, and chives. Dilute with mineral water if desired. Season with curry, pepper, and a little salt. Trim, peel, and wash the carrots, then grate coarsely or finely. Rinse and dry the basil, then pluck the leaves from the stems. Finely chop and toss with the carrots. Season to taste with a little sugar and lemon juice. Spread the sauce over the roast beef and serve with the raw carrots and bread.
