Tender roast beef with Germany’s most delicious herb sauce – very easy to cook at home
Ingredients for 4 persons
For the roast beef:
- 500g roast beef, trimmed
- Salt pepper
- 1 tbsp clarified butter
Green sauce:
- 100g natural yogurt
- 100g crème fraîche
- 1 bunch of spring herbs (e.g. chives, sorrel, chervil, lemon balm, tarragon, parsley, dill)
- 1 hard-boiled egg
- salt, pepper, sugar, mustard
For the roast beef
- Generously season the roast beef on both sides with salt and pepper and sear on all sides in hot clarified butter in a pan
- Place the pan in the preheated oven (100 degrees circulating air) or on the preheated grill (top shelf) and cook for approx. 45-60 minutes, depending on how well done you want it.
Green sauce
- Mix the yogurt and crème fraîche, chopped herbs (reserve a few sprigs for the garnish), and chopped egg, and season with salt, pepper, sugar, and mustard.
- Remove the roast beef from the grill or oven and slice thinly with a sharp knife. Arrange on plates with the green sauce and garnish with herb sprigs.
