Roast fallow deer

Ingredients for 5 servings:

  • 2 kg game meat (fallow deer meat), e.g. from the leg or shoulder
  • 3 small onions
  • 500 ml red wine
  • 500 ml water
  • some game spice, ground
  • salt and pepper
  • some sauce thickener for dark sauces
  • some butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 hours 30 minutes; Total time approx. 3 hours 45 minutes

delicious roast, made easy

Peel and finely chop the onions. Brown the fallow deer meat and onions on all sides in a little butter in a roasting pan. Deglaze the roast with the wine and water. Add the game spices with a little salt and pepper and stir into the stock. Braise the game for about 3-4 hours, turning the meat occasionally and stirring the sauce. Remove the meat from the roasting pan and set aside. Thicken the sauce with a sauce thickener until it reaches the desired consistency and season again to taste. The roast is now ready to serve. I recommend potato dumplings as a side dish.
