- First, you should wash the goose inside and out and then dry it with kitchen paper. Then rub the roast goose inside and out with salt and pepper.
- If you are expecting particularly hungry eaters, fill the goose, for example with an apple and nut mixture, with chestnuts or with potatoes. Then sew the opening shut with kitchen thread. Now heat some frying oil in an ovenproof roasting pan and fry the goose all over. Then turn the animal on its back.
- Now heat up your oven to 120 ° C. Cook the goose in the roaster for about 7 hours at this low temperature. You have to baste the roast goose with the frying fat from time to time, turning it over is not necessary. If you like it particularly crispy, you can grill the goose briefly. Then place the roast goose on a platter and keep it warm. Degrease the meat stock and then mix it with the white wine. Let the sauce reduce a little and season it. You can also bind the sauce with a little flour or sour cream.
