Roast lamb with bacon, onions and potatoes

Ingredients for 4 servings:

  • 1 ½ kg lamb, e.g. leg
  • 1 ½ kg potatoes
  • 5 large onions
  • 250 g bacon (bacon strips)
  • 500 ml meat broth
  • Salt
  • pepper
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours 5 minutes; Total time approx. 2 hours 35 minutes

Peel the potatoes and cut into 2-3 cm pieces. Peel the onion and slice it into wedges. Briefly sear the meat on all sides in a pan, season with salt and pepper. Place in a large roasting pan. Add the potatoes, onions, and bacon, then pour in the stock and cooking oil. Cover, e.g., with aluminum foil, and place in the oven at 200°C for about 2 hours. Serve with a green salad.
