Country spaghetti soup with egg

Ingredients for 4 servings:

  • 250g spaghetti
  • 1 large onion(s)
  • 1 can of tomatoes, chopped
  • 3 tbsp olive oil
  • 1 ½ liters of meat broth
  • 2 eggs
  • 3 tbsp Parmesan
  • 3 sprigs of basil
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Peel and finely chop the onion. Heat the oil in a large pot and lightly fry the onion. Then add the tomatoes and simmer, covered, over low heat for 10 minutes. Pour in the meat broth and simmer gently for 15 minutes. Meanwhile, break the spaghetti into small pieces and cook it in the soup until al dente. Wash and chop the basil. In a small bowl, combine the eggs, salt, basil, and cheese. When the pasta is cooked, remove the pot from the heat. Stir the egg and cheese mixture into the soup. Let stand for 3-4 minutes before serving.
