Roast pork with ginger – Muh Pad King

Ingredients for 2 servings:

  • 1 ½ tbsp peanut oil or sunflower oil
  • 250 g pork fillet(s)
  • 3 tbsp ginger root, 15-20 g net
  • 2 large garlic cloves
  • 6 m.-sized shiitake mushroom(s) or tongku mushrooms, dried
  • 100 g mushrooms, medium-sized
  • 1 m.-sized onion(s)
  • 1 large red chili pepper(s)
  • 6 spring onions (Thai), or 3 normal
  • 1 tsp, levelled palm sugar, grated, or white sugar
  • 1 ½ tbsp fish sauce
  • 2 tbsp oyster sauce
  • Pepper, black, coarsely ground, plenty
  • ½ cup water (soaking water from the mushrooms)
  • 1 dashes lime juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Place the dried shiitake mushrooms in a bowl, pour boiling water over them, and let them steep for 20-30 minutes. Squeeze the mushrooms thoroughly and cut into thin strips, cutting around the stems. Discard the stems, as they are tough. Trim the pork fillet and cut against the grain into 2-3 mm wide strips. Peel the ginger thinly and slice lengthwise into thin slices. Cut the slices into thin strips. Peel and finely dice the garlic. Trim and quarter the mushrooms. Peel the onion, halve it, and cut into thin wedges. Slice the chili diagonally into thin slices. Large chilies are not hot, but if you prefer a milder flavor, halve the pod, remove the seeds, and cut the halves into thin strips. Wash and trim the Thai spring onions and cut them into 3 cm long pieces. Heat the wok until dry, then pour in the oil. Immediately add the garlic and ginger and fry until lightly golden. Caution! This only takes a few seconds. Don’t let the garlic and ginger brown! Add the meat strips and stir-fry for 1-2 minutes. The meat shouldn’t be cooked yet. Add the chili strips, button mushrooms, and shiitake mushrooms and stir-fry for another 1-2 minutes. Next, add the white parts of the spring onions and the onion wedges and stir-fry for another 1 minute. Only then stir in the green parts of the spring onions. Immediately pour in about half a cup of the mushroom soaking water, bring everything to a boil, and season with fish sauce, oyster sauce, pepper, lime juice, and sugar. Simmer for a few more seconds and then season to taste. Tip: Depending on the brand of fish or oyster sauce, you may need to use a little more. The amount in the recipe is more of a minimum. Chicken breast can also be used instead of pork. In this case, the dish is called Gai Pad King.
