crispy side dish from the oven

Preheat the oven to 200°C (fan). Pour the oil or lard onto a non-stick baking tray and place in the oven. Peel the potatoes and cut into bite-sized pieces. Boil in salted water for about 6 minutes, then drain and return to the pot. Put the lid on and shake the pot vigorously to roughen the surface of the potatoes so they become nice and crispy. Remove the baking tray from the oven and carefully slide the potato pieces into the hot oil, turning them over to ensure they are coated on all sides. Return the tray to the oven and bake the potatoes for about 40 minutes, turning them over halfway through. Remove with a slotted spoon, season with salt, and serve.
