Stuffed zucchini

Ingredients for 4 servings:

  • 2 zucchinis
  • 1 sachet of mashed potato powder (instant, for 500 ml liquid)
  • 100 g fried onions
  • 100 g ham, diced
  • 1 can of tomatoes, chopped with herbs (400 g)
  • some salt and pepper
  • some milk and butter
  • some fat, for the mold
  • some parsley, chopped

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat oven to 200°C (180°C fan-assisted oven). Wash and trim the zucchini, halve lengthwise, and hollow out some of the flesh. Season the cut surfaces with salt and pepper. Prepare mashed potatoes according to the package instructions using milk, water, and butter and fill the zucchini casseroles (tip: this is especially easy using a stiff piping bag without a nozzle). Sprinkle the zucchini with fried onions and diced ham. Place the vegetables in a greased baking dish, add the chopped tomatoes, and season with salt and pepper. Bake in the oven for about 20 minutes. Serve sprinkled with chopped parsley.
