Roast Wild Boar with Bay Leaves

The perfect roast wild boar with bay leaves recipe with a picture and simple step-by-step instructions.

  • 1500 g From the leg of wild boar
  • 6 small Onions
  • 6 Toes Fresh garlic
  • 10 sheet Laurel
  • 2 El Tomato paste concentrated three times
  • 250 ml Red wine tart
  • 1,5 Tl Game seasoning, ready mix
  • A few drops of lemon juice
  • A little sugAr to tAste, if you like
  • 4 turns Black pepper from the mill
  • Potatoes depending on your appetite, please use small potatoes
  • 1 Tl Oil or clarified butter
  • 1 El Mango jam
  1. If necessary, remove any fat from the meat and then season. Put a little clarified butter or oil in the roaster and fry the meat very vigorously on all sides. Deglaze again and again with the red wine. Add the tomato paste and bay leaves, cover and let simmer gently for about 50 minutes.
  2. Now add onions and garlic and small potatoes. I deliberately added it later because these ingredients shouldn’t be so mushy. Let simmer until the potatoes are done. Add the jam and lemon juice and season to taste. If you like, you can add a little sugar.
  3. The potatoes taste so delicious because they cook in the sauce. We had a mixed salad with it. Meat was not eaten.
