The shelf life of roasted almonds is not uniform

Have you bought too many roasted almonds or caramelized them yourself and can’t use them right away? In this case, it is important to store the almonds properly. Basically, you should know the following:

  • Almonds consist of about 55 percent fat, of which unsaturated fatty acids make up a large proportion. These are sensitive to oxygen, light, and heat. When the fats oxidize and break down, the almonds taste rancid.
  • According to the Almond Board of California, peeled almonds can be kept for about 3 years under optimal conditions, i.e. protected from light, cool and vacuum-packed.
  • However, if the almonds are not vacuum-packed, the humidity in the air obviously plays a major role in how well the fatty seeds survive storage. The kernels should ideally contain no more than 6 percent moisture.
  • In tests, roasted almonds in particular showed greater instability with regard to oxidation of the fats. The background could be that they no longer contain the protective secondary plant ingredients, such as vitamin E, as in raw seeds.
  • With roasted almonds, the sugar-caramel layer protects the core from oxygen. However, sugar attracts moisture. That is why roasted almonds do not keep for long without additional storage measures.
  • The tonsils usually survive a few days and even a few weeks unscathed. On the other hand, it is annoying that the caramel layer of the kernels quickly becomes sticky and sticky – the more humid the climate, the faster this happens.

Roasted almonds have a far shorter shelf life than raw almonds. There are a few things to keep in mind when storing unwrapped roasted almonds.

  • Fill the almonds in a well-closable can or in a glass – it is important that as little air and moisture as possible gets into the roasted almonds.
  • It is best to place the jar in a dark, cool place – but not in the refrigerator.
  • Depending on the basic quality of the roasted almonds at the time of purchase, you can store them for up to two weeks.
  • Before consuming your stash, see if you notice a rancid, bitter, or slightly sour taste when you consume the first few pieces. If this is the case, the almonds are spoiled. Then you should no longer eat them, but dispose of them.
  • If you plan to keep a supply of roasted almonds for several weeks, you should pack them airtight, preferably using a vacuum sealer.
